A short history of eating in La Paz
From shellfish gathered on the bay to a Michelin-recommended kitchen downtown, the city has always eaten from the sea.
- Before 1535
The first cooks
The Pericú and Guaycura fished the Gulf coast and gathered shellfish along the bay. Local tradition credits the Guaycura with first using damiana, the desert herb still made into Baja California Sur's favourite liqueur.
- 1500s – 1900s
Missions and pearls
The Spanish missions brought crops and cattle, the start of the ranch cooking still found in the sierras. Pearl oysters made the town's fortune and its name, "La Perla del Pacífico".
- 1940s – 1980s
Seafood and the Malecón
Señora Clotilde sold seafood from a cart in the late 1940s; her family's Bismarkcito still serves chocolate clams on the Malecón. The Mercado Bravo opened in 1964, Nuevo Pekín in 1981 and El Zarape in 1988.
- Today
From tacos to tasting menus
Battered fish tacos remain a breakfast tradition, and cafés like Café Exquisito and KatKaw have joined the scene. NEMI is recommended by the Michelin Guide, and Quemadero cooks over fire by the bay.
